Today much of the wine scene in the Vivarais is made up by the co-operative cellars that emerged towards the end of the 19th century.

Red wines are produced with Grenache and Syrah, as are the rosés although there is likely to be a touch of Cinsault found as well; whites are generally made from Clairette, Grenache Blanc and Marsanne.
